PORK ULARTHU:

I remember reading a quote from Bruce lee somewhere and he said: “I fear not the fighter who has practised a hundred moves ones, but the fighter who has practised one move a hundred times”.

Pick a few dishes that you like the sound or look of and try cooking them several times until you feel you`ve really got the hang of it, and the recipe has become a friend. Here we are doing Pork ularthu, pork cooked and roasted with chilli and spices. One of my favourite dish since my childhood days. This is a “must” dish at a Kerala Christian home for any special occasion.

Ingredients:
Pork – 500g (cut into small pieces)
Small onion – 5
Green Chilli – 2
Ginger garlic paste – 3 tsp
Red chilli powder – 1 tsp
Pepper powder – 1 tsp
Turmeric powder – ½ tsp
Coriander powder – 4 tsp
Garam masala – 1 tsp
Curry leaves – few
Oil
Salt
To Marinate
Chilli powder – 1 tsp
Coriander powder – 2 tsp
Turmeric powder – ½ tsp
Lemon Juice – 1 tsp
Salt
Method:
Mix all ingredients to marinate. Add little water and make it into a good paste.
Add cut pork pieces and mix well.
Pressure cook marinated pork till its cooked well.
Open the cooker and if stock is there, continue cooking without putting the lid till pork is almost 80% dry.
Heat oil in a pan and crackle mustard seeds.
Add sliced onion and curry leaves.
When onion becomes soft add ginger garlic paste, green chilli and cook for 2-3 min.
Add coriander powder – 2 tsp, pepper powder – 1 tsp, garam masala – 1 tsp, salt and cook for 2-3 min.
Add cooked pork and mix well
Cook in medium flame till pork is completely dry and becomes dark brown in colour. Serve hot.
